Glycine

Glycine, with the symbol Gly or G, is the simplest stable amino acid found in all living cells.

The nutritional importance of glycine is not the main reason for its widespread use in food; rather, it is used due to its preservative properties, pleasant aroma, and mildly sweet taste. In addition, glycine is used in medicine for the treatment of various conditions, including stroke, schizophrenia, protection of the kidneys against drugs after kidney transplantation, prevention of alcohol-induced liver damage, treatment of hepatitis, heart health, wound healing and scar improvement, sleep problems, and certain issues related to metabolism.
